In 1991, we started creating these gourmet sausages for the very same reason. We have always been concerned about what goes into our food, but at the same time we love fun, exciting food. From the beginning we decided we could never compete with the big, mass produced sausage companies and the products they were putting out, so instead we decided to stick to a more up-scale, healthy, preservative free sausage.

All our pork and chicken sausages are made with whole cuts of meat, not trim, and we still hand-mix the spices. We use lots of fresh vegetables to keep the naturally lean sausages juicy and flavorful. And in keeping with our original creations, we never use preservatives, fillers or MSG. In fact, despite rising food costs, we can honestly say that in 16 years we have never compromised our recipes by changing the ingredients or making the links smaller.
