SOUTHWESTERN BLACK BEAN CHILI


This recipe is a hearty chili made with our Southwestern Chicken Sausage. This sausage is packed with smoked Chipolte chilis, beer, onions and parsley. You will find it a delightful alternative to using pork or beef in your chili recipe. Hope you enjoy it!


Ingredients:

  • 1 tsp. Olive Oil
  • 1 C chopped onion
  • 2 tsp. minced garlic
  • 1 chopped carrot
  • 1 T Chili powder
  • 1/4 tsp. Salt
  • 1/4 tsp. Pepper
  • 2 cans (15 oz.) black beans, drained & rinsed
  • 2 cans (15 oz.) tomatoes, chopped, or 3 large fresh tomatoes, chopped
  • 1 4.5 oz. can chopped green chili, drained
  • 1 lb. San Luis Southwestern chicken sausage, cooked & sliced in 1/2 inch pieces.
  • 1 C dark beer

Preparation:

Heat oil in a large saucepan over medium/high heat. Stir in onion, and cook for 5 minutes. Add the garlic and cook 3 minutes more. Add remaining ingredients and bring to a boil. Turn down heat and simmer for 30 minutes. Serve in bowls with corn bread.
