COUSCOUS WITH CHICKEN ITALIAN SAUSAGE
Ingredients:
- 1 tsp. Olive Oil
- 1 small onion - chopped
- 2 cloves garlic - chopped
- 1 C mushrooms - sliced
- 1/2 C celery - diced
- 2 C chicken broth
- 1 C diced tomatoes
- 1/2 C diced red bell pepper
- 1 tsp. grated orange rind
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 C dried couscous
- 1 lb San Luis Chicken Italian Sausage - cooked & thinly sliced
Preparation:
Heat oil over medium-high heat in a large saucepan. Stir in onion & garlic and cook for 5 minutes. Add mushrooms & celery and cook 5 minutes more. Stir in remaining ingredients and bring to a boil. Cover pan and turn heat to low. Cook for 10 minutes. Remove cover and stir well before serving.
