COUSCOUS WITH CHICKEN ITALIAN SAUSAGE


Ingredients:

  • 1 tsp. Olive Oil
  • 1 small onion - chopped
  • 2 cloves garlic - chopped
  • 1 C mushrooms - sliced
  • 1/2 C celery - diced
  • 2 C chicken broth
  • 1 C diced tomatoes
  • 1/2 C diced red bell pepper
  • 1 tsp. grated orange rind
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 C dried couscous
  • 1 lb San Luis Chicken Italian Sausage - cooked & thinly sliced

Preparation:

Heat oil over medium-high heat in a large saucepan. Stir in onion & garlic and cook for 5 minutes. Add mushrooms & celery and cook 5 minutes more. Stir in remaining ingredients and bring to a boil. Cover pan and turn heat to low. Cook for 10 minutes. Remove cover and stir well before serving.
