SQUASH GRATIN WITH SAN LUIS SAUSAGE
Just about any variety of San Luis Sausage will work in this easy dish!
Ingredients:
- 2 lbs. of squash, cut into 1 inch squares
- 1 Tblsp. olive oil
- 2 cups leeks, cut into 1 inch slices
- 1 lb. San Luis Sausage, casings removed (any variety of sausage is fine)
- 3 cloves of garlic, minced
- 1/4 cup chopped parsley
- 1/4 tsp. black pepper
- 1 can of chicken broth, approximately 15 ounces
- 1/4 cup grated parmesan cheese
Preparation:
Preheat oven to 400 degrees F.
Cook squash in a pot of boiling water until it starts to soften, approximately 10 minutes. Drain and set aside. Meanwhile, heat oil in a pan over medium heat. Add the leeks and cook until soft, approximately ten minutes. Remove leaks from pan and set aside. Add sausage to pan, increase heat to medium/high and cook as you would ground beef. When cooked through, combine sausage with garlic, leeks, parsley and pepper in a large bowl.
Butter a 13 x 9 x 2 inch pan. Arrange half the squash in the bottom of the pan and spread sausage mixture on top. Top with remaining squash. Pour broth over the squash and sausage mixture. Sprinkle parmesan across the top and bake for one hour.
