1 Cup Chopped Onion
3 Links San Luis Fiesta Chicken Sausage
1 16 ounce Can Refried Beans
8 ounce Can of Green Chilis
1 Cup Grated Monterey Jack Cheese
1 Cup Corn
1/3 Cup Flour
1-1/3 Cups Skim Milk
2 Eggs
2 Egg Whites


Turn on oven to 350F.

Remove the sausage from the casings and sauté them with the onion over medium heat until cooked throughout. Mix in the beans and set aside. Lightly spray a 11" x 7" pan with oil and lay half the chilies on the bottom. (Slice chilies down the side to open them up first.)

Sprinkle half the cheese over the chilies and spoon the sausage and bean mixture over the top. Spread the corn over the sausage and bean mixture then top with the remaining chilies and cheese. Mix the flour, milk and eggs together and pour over the layers. Cook at 350F for about 1 hour or until the egg mixture is set.
