1 Pound San Luis Chicken Italian Sausage
1/2 Cup Grated Jack Cheese
1 Cup Grated Romano Cheese
1/2 Cup Grated Parmesan Cheese
1 Cup Grated Mozzarella Cheese
2 Eggs
1/2 Cup Milk
12 Manicotti Shells, cooked
4 Cups Tomato Sauce


Turn oven on to 350F.

Take sausage out of casing and cook in a pan over medium heat until done, approximately 10 minutes. Crumble cooked sausage and mix with the cheeses, eggs and milk. Stuff carefully into manicotti shells. Place shells in a shallow 9" x 13" pan and cover with sauce. Cook for 30 minutes or until manicotti are warm throughout.

This dish uses our Chicken Italian sausage. You'll note that no other spices are added, since the sausage itself lends so much flavor to the mixture. The cheeses make this dish very rich, so make sure you serve it with a tossed salad and a fine bottle of wine. Enjoy!
